Lowfat Alfredo Sauce

Ingredients
1 cup evaporated skimmed/nonfat milk1/2 cup lowfat cottage cheese1 tbsp cornstarch1/2 cup parmesan cheese1/4 tsp salt1/8 tsp pepper1/2 tsp minced garlic dash of nutmeg
Directions
Place all ingredients in a blender or food processor and blend until smooth.

(I use a stick blender right in the pan)

Pour mixture into a saucepan and cook over medium heat until thickened and smooth, stirring occasionally.

Serve with hot, cooked fettucini.

Wonderful topped with grilled chicken, shrimp, and/or veggies.

    Made this tonight. Subbed unsweetened organic soymilk for milk, everything else the same. Incredible. Can't believe it's lowfat. Total keeper, for sure. - 11/1/17
