Ingredients
2 oz Cream Cheese 16 oz Mozzarella Cheese, part skim milk 1 large Egg, fresh, whole, raw 1 cup Bob’s Red Mill Almond Meal/Flour (1/4 cup is 28g)
Directions
Place mozzarella and cream cheese into microwave safe bowl. Microwave on high for 2 minutes. Remove and add almond flour. Add egg to top of almond flour, and begin to mix with a fork to blend. Almond flour will keep egg from cooking in hot cheese. When dough forms, use hands to form it into a ball, making sure ingredients are mixed well. At this point, you can add seasonings if desired, or wait until it is rolled out and add them to the surface of the dough. Place between two sheets of parchment paper to roll. Dough an be rolled thicker for garlic bread, thinner for pizza crust, and even thinner for crackers. Shape according to your preference. Can be baked for 10 minutes before adding pizza toppings, but it is not necessary. Bake at 375 degrees until your favorite degree of golden brown is reached - 15-25 minutes. Baking time depends upon thickness.
