Okra & Meatballs

Ingredients
16 oz. Ground Turkey1 Egg white 1/2 cup seasoned bread crumbs4 c. sliced Okra (canned or frozen)4 c. Canned Tomatoes2 c. chicken broth2 stalks celery, chopped1 onion, chopped1 green pepper, chopped1 tbsp. olive oil1 tbsp. Cajun seasoning
Directions
Mix ground turkey with egg white & bread crumbs. Put oil in large cooking pan & heat at medium high. Make walnut size meatballs with meat mixture, add to pan & cook until done. Chop onions, green pepper & celery. Take out meatballs of pan. Add onions, green pepper & celery to the pan. Cook until transparent. Add garlic, cook 1 more minute. Add rest of the ingredients & simmer for 30 minutes. Serve with rice.

    We enjoyed this very much! I added garlic as mentioned in the instructions. (4 lg. cloves.) Doubled the Cajun spices for more flavor 2nd time. Also good w/ corn and red beans added. I served it over brown rice. 7/31/09 Up the spices w/ beans. Also good w/ mac & cheese. - 9/28/08

    Yum! I make this last night for dinner. Everyone (hubby, 15 yo daughter, 11 yo son) liked it. I loved it! I made recipe as-is, other than I used ground venison in place of ground turkey... and I upped the veggies just a little. I used 1 T of cajun seasoning and it was plenty spicy!! Thanks! - 3/8/11
