Jose's Beans and Rice

1 15 oz can of Bush's Black Beans1 cup of Minute Rice1 cup chopped red onion1 cup chopped red bell pepper3 cloves garlic (chopped)1 package Old El Paso taco seasoning1 tbsp ground cumin1/2 cup chopped fresh cilantro1 tbsp Kosher salt1 tsp fresh ground black pepper1 tbsp exra virgin olive oil1 chipotle pepper in adobo sauce (finely chopped)1 lime
1. Heat EVOO in a large deep skillet.
2. Add onions, bell pepper, garlic, salt, and pepper.
3. Saute onions and peppers until soft (about 5 mins.)
4. Add beans, rice, taco seasoning, chipotle pepper, cumin, and 1 2/3 cups of water.
5. Stir, cover, and allow to simmer, stirring occasionally, until rice is plump and liquid is absorbed. (about 7-10 minutes)
6. Take off heat and stir in the juice from 1 lime and the cilantro.
7. Makes 2 generous servings of 15 to 16 ounces or split it into 4 servings and serve it as a side dish with grilled chicken.
