More Pumpkiny Low-Carb Hot Pumpkin Cereal

Ingredients
0.5 cup Ricotta Cheese, whole milk 1 large Egg, fresh, whole, raw 0.33 cup Pumpkin, canned, without salt 0.125 tsp Salt 0.5 tbsp Butter, unsalted 0.25 tsp Cinnamon, ground 0.25 tsp Nutmeg, ground 1 serving Bob's Red Mill Whole Ground Flaxseed Meal, 2 Tbsp. 2 tbsp Half and Half Cream 2 serving Trader Joes Stevia extract 100%pure 1 scoop 45mg (by FRESHANDNEW)
Directions
1. In a medium-sized saucepan, over medium heat, mix the ricotta with a little water to thin it out.

2. Whisk egg in a small bowl, and add to ricotta mixture (this step is important-- you don't want a lot of stringy egg white in your cereal). Continue stirring.

3. Add the pumpkin and salt.

4. Sweeten to taste with stevia and add cinnamon, nutmeg, or whatever you like.

5. Continue to stir for 2 or 3 minutes. When it goes "grainy", that's the egg cooking.

6. Stir in the flaxseed meal at this point and stir for another minute or 2.

7. Add the butter and cream, then remove from heat.

8. Enjoy!
