Ingredients
4 tbsp Extra Virgin Olive Oil 5 cup, cubes Eggplant, fresh 1.5 sweetpotato, 5" long Sweet potato 20 spear, small (5" long or less) Asparagus, fresh 15 serving Cherry Tomatoes, Fresh, 1 Tomato 4 clove Garlic
Directions
cube sweet potatoes and eggplant, cut asparagus into 1'' pieces, slice tomatoes in half, crush garlic. toss everything together with olive oil and seasoning. spread on pan and roast @450 for 40 mins or until tender.
