Moose Stew

Ingredients
2 tbsp Extra Virgin Olive Oil1 lb. Moose, stew chunks5 potatoes, peeled and cut into chunks6 carrots, peeled and chopped4 celery stalks, chopped2 onions, quartered4 cups beef broth, low sodium2 cups mixed vegetables, frozen2 tsp salt1 tsp pepper1/2 tsp thyme, dried4 bay leaves
Directions
Heat a dutch oven on medium high. Add olive oil. In batches, brown the moose meat and put aside.
To the pot add the onions and cook 2 minutes. Then add the celery and carrots. Cook about 7-8 minutes, stirring frequently. Add the moose meat, 1 tsp salt and 1/2 tsp pepper and stir. Add in 2 cups of the broth, cover and let simmer for about 20 minutes. Remove lid and add in the remaining broth, potatoes, frozen vegetables, thyme, bay leaves, salt and pepper and stir. Cover, lower heat to simmer and simmer for 2 hours. Remove lid, season to taste and serve. Makes about 6 servings.
