4 oz. uncooked chow mein noodles1/2 cup boiling water1 tbsp. vegetable oil1/2 large onion1 1/2 cups mushrooms, sliced1/4 cup cold water1/2 cup broccoli1/3 cup chopped sweet pepper1 tbsp. soy sauce2 tbsp. honey garlic or teryaki sauce2 tbsp. cold water1 tsp. cornstarch
In a bowl combine noodles and hot water. Let stand 3-5 minutes, until softened. In a large pan, combine oil and onion. Stir-fry on high until onion is softened. Add mushrooms and water. Once mushrooms have begun to soften, add broccoli and red pepper. Add soy sauce and honey garlic/teryaki sauce. Cook on medium-high until vegetables are crisp-tender and liquid is boiling. Dissolve cornstarch in water and pour over mixture. Cook over medium heat until sauce is thickened. Serve immediately. Makes 2 servings.
