Ingredients
2 zucchini cut into rounds6 winter squash cut into rounds1 bunch baby bok choy1 sweet pepper6 brussel sprouts cut in half1 garlic clove sliced4 lamb shanks cut in 1/24 cups vegetable stock
Directions
Cut all the vegetables and put in the slow cooker add the meat and the stock and turn on slow cooker. This takes 8 hours to cook and serves four so it's brilliant to put on before you go to work as there is no stirring required
