Texas Caviar

Ingredients
1 Can sweet yellow corn.1 Can black beans, appx. 1.5 cups1 Can black eyed peas, appx 1.5 cups2 tsp onion powder (1 small onion chopped can be substituted)3 cloves fresh garlic, minced2 cups cherry tomatoes, quartered1/2 Tsp. Salt, to taste1/4 Tsp. Pepper, to taste3 TBSP Light or fat free Italian dressing, to coat.
Directions
Drain corn, beans and black eyed peas and combine in large bowl. Mix remaining ingredients and coat with salad dressing. Add salt and pepper to taste. Cover and chill for at least two hours before serving. Serve with toasted pita chips or wheat crackers.
