Saute diced onion in olive oil until golden
Add minced garlic, saute 30 seconds
Add vegetable broth, ginger, cumin, and coriander, stir fry ingredients in
Add spinach, cover simmer on medium heat for about 20 min
Uncover and continue to simmer to reduce liquid to nearly dry
Add yogurt and stir in quickly
Simmer to desired consistency, serve hot
