Gluten Free Tuna Macaroni Salad

1 pound box Gluten Free macaroni6 oz can tuna chunks in spring water, drained6 or 8 cocktail gherkins3 spring onions, sliced thin2 stalks celery sliced thin6 baby carrots sliced thin2 1/2 Tbsp light mayonnaise (optional) 6 or 8 cocktail prawns cut in half
Add macaroni to a large pan of boiling water. Cook 8-10 minutes. Pour into colander and rinse first with hot water to remove excess starch then with cold water to cool. Drain and put in large bowl. Add vegetables, tuna and mayonnaise. Stir until well mixed. Cover and refrigerate 1-2 hours. Serves 6. Unsure of nutritional info.
