Low Carb Zeroodle Chicken Soup

200 grams Carrots, raw 150 grams Celery, raw 1 large Onions, raw 9 serving Broth, chicken: Kitchen Basics, Unsalted Chicken Cooking Stock, 1 cup(240 ml)/serv (by SONNYG1) 1 grams Bay Leaf .3 tsp Thyme, ground .75 tsp Salt .25 tsp Pepper, black 600 gram(s) Zeroodle Rice (by CLANE82) 450 grams Roasting Chicken, light meat
1. Chop or slice all vegetables and add to large dutch oven.
2. Add chicken stock and spices and bring to boil, then simmer for 10 minutes.
3. Add chicken cut into small pieces. Simmer another few minutes and remove bay leaf.
4. Let cool and fill 3 large (5.3 cup ) containers and freeze.
5. Rinse and boil 200 g of Zeroodle rice for 2 minutes. Drain and add to reheated thawed soup, per 1 container out of the 3.
6. Zeroodle rice cannot be frozen as they are made from shiratake noodles and shrivel up if frozen.
Serving Size: Makes 9 servings of soup for freezing in 3 large (5.3 cups) containers .
