Mexican Quinoa Bites

50 Avocados, California (Haas) 0.50 cup Yellow Sweet Corn, Canned 0.50 cup, chopped Onions, raw 1 cup, chopped Peppers, sweet, red, fresh 0.50 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry 1 cup Bush's, Black Beans 2 tbsp *Flax Seed Meal (ground flax) 4 oz Soy Cheese
Rinse quinoa and cook according to package directions.
Combine beans, avocado, peppers, corn and onion in a small bowl and mix well.
Add spices and stir to combine.
Add cooked quinoa (cooled slightly), ground flax egg, ground flax and mix well.
Spray mini muffin tins with cooking spray and spoon in quinoa mixture.
Bake at 375 degrees for 15 minutes.
Remove from oven and let cool 5-10 min in pan.
Gently remove from pan and serve with salsa.
