Chicken Mango Salad with Ginger Orange Dressing

Ingredients
1/2 C plus 1 tblsp oil1/4 C orange juice2 Tblsp unseasoned rice vinegar2 Tblsp finely chopped crystallized ginger1 1/4 pound cook chicken breast4 servings of salad greens1 large mango peeled, pitted and cubed1/2 small red onion thinly sliced
Directions
Whisk 1/2 C oil, orange juice and vinegar together then season to taste with salt and pepper.

Bake chicken in 350 degree oven until done. Remove and cube.

Mound lettuce on plate, top with chicken, red onion and drizzle with salad dressing.
