4.5 cup fresh Butternut Squash 1 cup, sliced Zucchini 1 cup Leeks 1 cup, chopped Carrots, raw 1 small (1-3/4" to 2-1/2" dia.) Potato, raw 4 tbsp Olive Oil 1 tbsp Salt 1 tbsp Pepper, black 6 cup (8 fl oz) Water, tap
Place olive oil in a pot at medium heat. Chop all vegetables and place in the pot. Add salt and black pepper and stir to mix the vegetables with the oil. Cover vegetables with water. Cook at low heat until veggies are soft. Let it cool down and blend.
