Beef and Bok Choy Curry

Ingredients
1 large Onions, chopped2 clove Garlic 1/2 Tbsp Canola Oil1 lb Ground Beef (extra lean) 1.5 c Campbells vegetable broth no salt 2 Tbsp Sri Lankan Roasted Curry Powder homemade, or any other 1 Tbsp Cornstarch 6 cups/ 6 heads baby Bok Choy, sliced
Directions
Saute onion and garlic on oil in a large pan.
Add beef and cook, stirring, till cooked through.
Stir in seasoning.
Mix together broth and cornstarch then add to pan and cook down a little. Add Bok Choy and continue cooking until greens are wilted and tender, and sauce is thickened.
