Garbanzo Tomato Pasta Soup

Ingredients
2 cups of Vegetable broth3/4 cup of uncooked pasta1 tablespoon of olive oil1 medium onion, chopped4 cloves of garlic, minced1 can of garbanzo beans, drained and rinsed1 large (28oz) can of diced tomatoes1/2 teaspoon of dried basil1/2 teaspoon of dried thymeSalt and pepper to taste
Directions
1. Bring Vegetable broth to a boil in a large pot. Add pasta and cook for 8-10 minutes or until al dente.

2. Meanwhile, heat oil in a small skillet over medium heat. Saute onioins and garlic until translucent. Stir into pasta and add garbanzo beans, tomatoes, basil, thyme, salt and pepper. Simmer for another 15 mins.

    This is so yummy! I used 1 cup of garbanzo beans, and substituted garlic powder since I didn't have cloves and it was really delightful. I don't usually like tomato soup so I was pleasantly surprised to find this, and will make it again and again. I found it made almost 5 cups. - 8/19/10

    Very good hearty soup! It was almost more like a stew so if you like it with more broth just add more! I think next time I will add some protein by adding veggie beef crumbles! - 12/2/08
