Orange Shrimp Cauli Rice

Ingredients
3 cup green giant cauliflower rice 1 package (10 oz) Mixed Vegetables, frozen 1 lb Shrimp, frozen, medium, raw, peeled/de-veined/tail-off 1 tbsp Extra Virgin Olive Oil 3 Tbsp Smucker's Simply Fruit orange marmalade1 tsp Ginger, ground .5 tsp Pepper, black 1 Tbsp Soy Sauce
Directions
Add olive oil to large skillet and heat on medium to high. Add vegetables and cook for 5-6 minutes, stirring occasionally. Add shrimp and cook until pink, stirring occasionally. Add marmalade, soy sauce and seasonings. Cook, stirring often, until marmalade is melted and evenly distributed.
Note: you can add scrambled egg if you like but you will have to account for the additional calories
