Curried tofu & edamame

Ingredients
1.0 tbsp Curry powder1.0 dash Pepper, black1.0 dash Salt0.33 cup, chopped Scallions, raw2.0 tsp Soy Sauce1.0 block Tofu, firm1.0 tbsp Extra Virgin Olive Oil0.5 Cup Edamame, frozen, unprepared1.0 tbsp *Kraft Mayo with Olive Oil (reduced fat mayonnaise)0.2 cup Stoneyfield - Organic Plain Whole Milk Yogurt6.0 tbsp (C) Vinegar, Red Wine (Gr Value)1.0 serving Red Bell Pepper (one medium pepper)
Directions
Saute diced tofu in olive oil for 7 minutes. Add soy sauce and saute for one more minute. Add raw diced vegetables to a bowl. Add curry, cumin, yogurt, and mayonnaise together. Add mixture to veggies and fold. Finally add the tofu. Eat hot or refrigerate and eat cold. Season to taste. Serving Size: 3 1.5 cup servings
