3 thigh, bone and skin removed.5 medium (2-1/2" dia) Onions, raw 2 stalk, large (11"-12" long) Celery, raw .5 medium (approx 2-3/4" long, 2- Peppers, sweet, red, fresh 4 serving carrot shreds 3 serving Miracle Noodle Fettuccini (by RUSSP1950) 4 serving chicken broth homemade 1 cup (by WATERGIRL51) .25 tbsp Xanthum Gum - Bob's Red Mills (1TB,9g) .083 =.25ts (by CORLISSTRIEDIT) 1 cup Full fat coconut milk (by EMALULA) 2 tbsp Extra Virgin Olive Oil 1 tsp Garlic powder 1 tsp Onion powder 1 tsp Italian Herb Seasoning - McCormick (by JCO0715) 0.25 tsp Seasoning - Morton Fine Sea Salt (Mediterranean Sea Salt) (by --SHELLEY--)
Boil chicken in enough water to cover for 30 minutes. Remove from water, set aside. Set broth aside for later. Heat oil and saute onion, celery, and red pepper until soft. Add broth, carrots, noodles, and chicken. Add coconut milk and sprinkle xanthum gum over top. Cover and let cook for 40 minutes.
