32 oz chicken breast, skinless, uncooked (by CLAYMACT) 1 pepper, large (3-3/4" long, 3" Yellow Peppers (bell peppers) 2 tbsp Extra Virgin Olive Oil 2 cup, chopped Onions, raw 3 clove Garlic 4 fl oz White Wine 2 cup Canned Tomatoes 2 cup, sliced Zucchini 10 medium Mushrooms, fresh 1 tbsp Oregano, ground
Heat Olive oil in deep skillet - 1 Tbsp
Fry chicken breast on both side until golden. Set aside.
Heat remaining olive and saute yellow pepper, onions, garlic, zucchini and mushrooms for 5- 10 minutes.
Return chicken to the pan and add canned tomatoes, wine and oregano.
Bake uncovered in a preheated 350 degree oven for 1 1/2 hours.
Serving Size: Four servings
