Keto Broccoli Salad

For Salad:3 heads broccoli, cut into bite sized pieces1/2 cup shredded cheddar1/4 red onion, thinly sliced1/4 cup sliced almonds3 slices bacon, cooked & crumbledFor Dressing:2/3 cup mayo3 tbsp apple cider vinegar1 tbsp yellow mustarddash of black pepper
1: In Medium pot, bring 6 cups salted water to boil. While waiting for water to boil, prepare large bowl with ice water.
2: Add broccoli to boiling water and cook until tender 1-2 minutes. Remove with slotted spoon and place in ice water. When cool, drain in colander.
3: In medium bowl, whisk to combine dressing ingredients.
4: Combine all salad ingredients together in a large bowl and pour dressing over. Toss to coat. Refrigerate until ready to serve.
