Cheesy Chicken Enchilda Casserole

Ingredients
Preheat oven to 350 degrees.Boil the chicken in water until done. Drain and chop into small pieces.Chop onion.Spray a 13x9" pan with cooking spray.Dip tortillas in the enchilada sauce one at a time, making sure they are completely covered with sauce.Layer covered tortillas in the bottom of the pan, it should take six.Add a layer with one third of the chicken, onion & cheese. Add another layer of the tortillas dipped in sauce. Press down gently all over the pan.Add another layer with another one third of the chicken, onion & cheese.Add another layer of the tortillas dipped in sauce. Press down gently all over the pan.Cover with remaining chicken, onion and cheese.Bake for 30-45 minutes, until cheese is bubbly, starting to brown and the casserole is hot all the way through.Serves 12.

    I was having a mexican theme get together and was hesitant to make this but went ahead anyway. WOW! This was a BIG hit. I made it almost to the tee as the recipe but I did not have 3 cups of enchilda sauce so mixed Taco Bell taco sauce with it.. You could add cilantro and a tomato to the onion - 7/17/08
