Tuscan Style Lentils

Ingredients
2 Cups dried green lentils1 Tbsp Olive Oil1 small onion, chopped2 garlic cloves, chopped 2 celery stalks1 Tbsp dried oregano
Directions
Rinse and pick over lentils
Soak 1 hour in cold water
Heat olive oil in a large saucepan. Cook onion, garlic, and celery over medium heat until onion is golden.
Add lentils, and cover with water. Season with salt and pepper. Bring to a boil. Lower heat and let simmer, covered, about 1 hour.

Add oregano. Continue cooking until lentils are cooked but retain their shape. Add water when necessary. Finished dish should not have much liquid.
