Masa Harina Pancakes

Ingredients
1/2 cup Masa Harina 2 large eggs 1/2 cup Water 1 tsp Granulated Sugar 1 1/2 tsp Baking Powder 1 tbsp Corn Oil
Directions
Beat eggs in pitcher. Add water, oil, sugar and baking powder, mix well. Add masa harina, beat until smooth (there is no gluten, so the batter will not get tough). Fry batter on greased skillet (cast iron works best). Serve with desired topping.

Serving Size: Makes 4-6 small pancakes (3-4 inches diameter)
