Lite Broccoli and cheese Quiche

Ingredients
1 serving Pillsbury Pie Crust - 9 inch (by ACANTRELL5) .25 cup (8 fl oz) Yogurt, plain, skim milk 2 tbsp Extra Virgin Olive Oil 1 serving Mushrooms, Fresh, White Button, Sliced (3 oz / 85g) .5 tsp Pepper, black .25 tsp Salt .25 tsp Nutmeg, ground 1 tsp Garlic powder 1 tsp Onion powder 1 cup Kroger Colby and Monterey Jack Cheese shredded .5 cup Milk, nonfat (skim milk) 1 cup Spinach, fresh 2 serving Egg white, large 1 large Egg, fresh, whole, raw 2 serving Green Onion (fresh-1 stalk)
Directions
Preheat oven 350

Place pie crust evenly in an eight inch pie pan.

In a large mixing bowl combine egg whites, egg, milk, yogurt

Chop green onions. place aside.

Put a large skillet over med high heat. Place Olive oil in skillet. When olive oil begins to shimmer add onions and mushrooms. Saute for five minutes. Add spinach and saute for an additional 10 minutes.
Place vegetables evenly in pie crust.
place cheese evenly over vegetables.
Pour milk and egg mixture evenly over vegetables.
Place pie pan onto a baking sheet and place in the oven
Bake for 45 minutes to one hour or until edges are set
Remove quiche from oven after cooking and place on cooling rack to cool.
