Green Chile and Mushroom Egg Bake

Ingredients
2 cup, pieces or slices Mushrooms, fresh 2 tbsp Mild Green Chiles, Peeled & Diced 8 large eggs2 oz Unsweetened Original Almond Milk (or light milk of your choice)4 oz Colby or Cheddar Cheese Salt and Pepper to taste1/4 tsp Ground Mustard
Directions
Saute chopped mushrooms in a small amout of olive oil (not included in calorie count)
Mix eggs with milk in a large bowl
Add remaining ingredients and cooked mushrooms to egg mixture
Pour into greased 8x8 inch glass baking dish
Bake at 375 for 25 minutes.

Serving Size: Makes four good sized servings.
