Lentil tacos (from Allrecipes)

Ingredients
2/3 cup - Lentils (dry) 2/3 cup, chopped Onions, raw 1 clove Garlic 2/3 cup Aldi Casa Mamita Medium Chunky Salsa (by JENNTHOMAS47) 1 Chipotle Pepper in 1 Tbsp Adobo Sauce (by SNAVELA1) --chopped1 can-- diced tomatoes w/ green chilies (Casa marital , aldi ,10oz can) 1 Jalapeno Pepper-chopped 1 tsp Chili powder
Directions
Rinse lentils. Simmer covered in 1 2/3 cup water (or veggie broth, but not in calculations) about 25-30 minutes until soft. Mash slightly. Add onion, garlic, canned tomatoes, chipotle and jalapeno pepper, and seasonings. Cover and let simmer until veggies are soft and cooked. Use about 1/4 cup per per taco. Use shells and condiments of choice.
