Simple Egg Curry

1.5 tbsp olive oil1 large red onion, minced1 tbsp grated ginger root3 med fresh tomatoes or 1 can diced tomatoes0.5 tsp turmeric0.25 tsp cayenne1 tsp ground coriandersalt to taste1 cup nonfat milk 6 hard boiled large eggs
In a large skillet heat the oil. Add the onion and saute until browned. Add ginger and cook for 1 min. Add tomatoes and until tomatoes are soft. Add turmeric, cayenne, coriander, and salt. Mix well.
Add milk and bring to a boil. Lower heat, cover, and simmer for 4 to 5 minutes. Slice the eggs and gently fold into the sauce.
Serve hot with Naan or other bread.
