Teriyaki Tofu Sandwich

Ingredients
1/2 tsp olive oil3 oz super firm tofu1/4 small onion1/4 green pepper chopped in chunksteriyaki sauce1/2 C sliced mushrooms1 hoagie rolllettuce, tomato slices, fat free mayo
Directions
Heat oil oil in saute pan over medium hi heat. Add tofu and saute til lightly browned.
Turn heat down to medium and add onions and green pepper; cook til slightly softened then add mushrooms and do the same. Meanwhile, prepare hoagie with desired condiments (leave the lettuce and tomatoes for last). When mushrooms are slightly softened turn heat to low then drizzle teriyaki sauce, a little at a time, until mixture is coated. Heat for just a couple of minutes making sure not to burn.
Spoon mixture onto hoagie bun, top with lettuce, tomato.
This recipe is delicious served over rice for an asian dinner.
