Banana bread muffins with coconut oil

Ingredients
2.0 large Egg, fresh, whole, raw0.5 tsp Salt0.5 tsp Vanilla Extract0.75 cup Coconut Oil1.0 medium (7" to 7-7/8" long) Banana, fresh1.0 tsp Baking Soda1.0 cup Granulated Sugar1.5 cup Flour, white
Directions
Preheat oven to 350F. Mash bananas (I like ripe bananas) coconut oil (liquefied in the microwave), sugar, vanilla and eggs. In a separate bowl mix dry ingredients together. Fold dry ingredients into wet banana mixture until well blended. Use coconut oil on a paper towel to grease the muffin tin (or use paper liners). Fill each muffin about half way. Bake at 350 for 20-25 minutes Serving Size: Makes 24 regular size muffins
