2.0 large Egg, fresh, whole, raw0.5 tsp Salt0.5 tsp Vanilla Extract0.75 cup Coconut Oil1.0 medium (7" to 7-7/8" long) Banana, fresh1.0 tsp Baking Soda1.0 cup Granulated Sugar1.5 cup Flour, white
Preheat oven to 350F. Mash bananas (I like ripe bananas) coconut oil (liquefied in the microwave), sugar, vanilla and eggs. In a separate bowl mix dry ingredients together. Fold dry ingredients into wet banana mixture until well blended. Use coconut oil on a paper towel to grease the muffin tin (or use paper liners). Fill each muffin about half way. Bake at 350 for 20-25 minutes
