Skillet sweet potato with fried egg

0.5 sweetpotato, 5" long Sweet potato0.25 tsp Himalayan pink sea salt 0.25 tsp Parsley dried 0.25 tsp Cinnamon, ground 1 1tsp Coconut Oil 1 tbsp chopped Onions, raw 1 serving Egg - Large (1 egg)
Peel sweet potato and cut into bite size pieces. Heat a skillet over medium heat and add coconut oil. When oil is hot add sweet potato and onions. Stir to coat all pieces with coconut oil. Add seasonings and mix well. Cook, stirring occasionally for about 15 minutes or until soft. Keep an eye on the orators so they don’t burn. When potatoes are almost done,, heat another skillet on medium,spray with butter cooking spray. Fry egg. Serve with sweet potato hash
