Fried Apples

Ingredients
1 medium (2-3/4" dia) Apple sliced very thinWater to coverCinnamon to taste4 walnut halves, broken up1T Splenda, or to taste
Directions
1. Spray small fry pan with non-stick cooking spray
2. Add apples and quickly stir just to very lightly brown
3. Add water just to cover apples.
4. Bring to boil then turn down heat to simmer. Let water evaporate until juice looks thickened.
5. Add Splenda, cinnamon and walnuts.
6. Stir 1 min more.

Apples vary in sweeteness. Add Splenda according to taste. Some apples such as Delicious need no sweetening at all!

    I do this but not as breakfast...I often do it as a side dish instead of a starch with lean pork (like tenderloin). And some times with fat free Greek yogurt as dessert. - 12/13/10
