Matzoh Kugel for Passover

4 squares, Matzoh7 large Eggs, divided 4 large Apples, peeled and grated1 1/2 cup Granulated Sugar 1/2 cup, packed Raisins Juice from 1/2 Lemon1/3 cup Butter, melted1 1/2-2 tsp Cinnamon, ground Salt to taste
Preheat oven to 375 degrees.
Soak and drain matzoh Beat egg yolks. Add to matzoh. Add grated apples and sugar. Mix together. Add raisins, lemon juice and butter, cinnamon, and salt. Beat egg whites until stiff. Fold into matzoh mixture.
Bake in a 2" deep dish [not as big as a 9x13" dish] at 375 until brown as desired. Approx. 30 to 35 minutes.
