Low Carb Mexican Cauliflower with Feisty Crumbles

2 medium heads Cauliflower cut into florets2 medium onions, rough diced8 cloves Garlic2 Serrano Peppers 4 medium Tomatoes 2 green Bell peppers2 tsp Cumin powder 1 tsp Paprika 1 tsp dried Coriander 2 packages (10 servings total) Beyond Meat Beef-Free Feisty Crumbles
Turn oven on 425. Spray cauliflower with olive oil spray and oven roast for 35 minutes. Meanwhile, rough chop rest of vegetables and process in food processor. Place in large pot with spices and crumbles, bring to boil, cover and simmer for 30 minutes.
Divide cauliflower into 6 dishes and cover each with 1/6 of sauce.
