Chocolate Chip Cookie Pizza/ Bars

1 cup almond flour 1/4 Coconut Flour, Bob's Red Mill (by LIVESIMPLY1) 1 tbsp Great Lakes unflavored Beef Gelatin (1 serv = 1 tbsp or 1/4 oz or 7 g) 1/2 cup Unsweetened coconut flakes/ shreds - Simple Truth Organic 1 tsp Baking Powder 1/2 tsp Baking Soda 1 tsp Himalayan Pink Sea Salt (by LUCKLYS) 0.75 cup Butter, salted -- softened3/4 cup Erythritol - Anthony's Natural -- grind into powder2 extra large Egg, fresh, whole, raw 1 Tbsp. Vanilla Extract 1 tsp Cinnamon, ground 51 gram (1.8 ounces) central market organic dark chocolate 85% cacao -- chopped into small chips34 grams (1.2 ounces) Ghirardelli 100% Cacao Unsweetened Chocolate Baking Bar -- chopped into small chips1/2 cup Almonds, dry roasted -- chopped
Preheat oven to 350 degrees. Grease 16 inch pizza pan, or large rectangular baking dish (I line with parchment paper as well).
Mix in large bowl of stand mixer: almond flour, coconut flour, coconut shreds/ flakes, gelatin, baking powder, baking soda, and salt. Make sure there are no clumps/ lumps.
Add softened butter, (powdered) sweetener, eggs, vanilla extract, and cinnamon. Mix until a thick dough forms.
Stir in chocolate and nuts (by hand is recommended).
Spread dough in prepared pan, and smooth.
Bake 15 - 18 minutes for pizza pan; about 25 - 30 for rectangular pan. until lightly browned and set. Let cool at least 10 minutes before cutting.
Cut cookie pizza into 12 wedges; Cut rectangle into 24 squares (or 12 larger bars).
Serve warm or room temperature.
