Yummy Egg Scramble

Ingredients
1 large Egg2 large Eggs Separated using Whites only3 Baby Bella mushrooms chopped1 Roma Tomato chopped1/4 cup Spinach rough chop1 Tsp Olive Oil SaltOnion Powder
Directions
Heat olive oil on medium and sauté mushrooms. Separate the egg whites from 2 eggs (discarding the yolk) then scramble with one whole egg. When the mushrooms are sautéed, about 5 minutes, add the tomatoes and cook another minute. Once the tomatoes have warmed add the spinach and allow it to wilt. Add the eggs and cook just until firm, at medium heat should only take a couple of minutes.
Serve with Fruit on the side!
