Roasted beet spinach salad

Ingredients
1.0 cup Spinach, fresh0.5 serving Baby Beets (Melisssa's peeled & steamed) 2 beets/serving0.5 cup slices Apples, fresh with skin1.0 tbsp Olive Oil1.0 tbsp Maple Syrup1.0 tbsp Vinegar - Natural Rice Vinegar (Nakano)
Directions
Roast beets on o en Perl and slice. In a bowl place spinach, beet slices and apple slices. In a separate bowl mix maple syrup vinegar and oil. Add salt and freshly ground pepper, just a little of each. Mix dressing, pour over salad and toss.
