Italian Chicken Stir Fry

1 medium zucchini, diced1 medium summer squash, diced1 medium onion sliced1 Tbsp. olive oil2 Tsp. minced garlic1 can artichoke hearts, drained1 can Italian style stewed tomatoes, cut up6 oz. boneless skinless chicken breast, cut into strips1 cup cooked whole wheat penne1 Tbsp. oregano1 Tbsp. sweet basil1 Tbsp. corn starchsalt and pepper to taste
Place chicken in frying pan with olive oil. Cook through. Add zucchini, squash and onion, and spices saute for 3 minutes. Add drained artichokes. Add can of stewed tomatoes with juice. Cook, stirring frequently for 3 minutes. Add cooked pasta and continue cooking until heated through.
Add 1 Tbsp of corn starch to a small amount of cold water and add to dish to thicken.
Serve hot topped with fresh parmesan cheese.
