4 oz FISH - Mahi Mahi 1 pat (1" sq, 1/3" high) Butter, salted .5 Lemon, sliced1 clove Garlic 3 cup Spinach, fresh .5 cup, chopped Onions, raw 1 cup, pieces or slices Mushrooms, fresh 2 T waterSaltPepperRed pepper flakes
Sauté onions and mushrooms over medium high heat until golden. Set aside. In same pan, on medium heat, season fish and cook about 4 minutes per side. Set fish aside. . Add spinach. Salt and cover pan until spinach is wilted. Put wilted spinach on plate. Put mushrooms and onions back to the pan along with butter and lemon slices. Add about 2 T. water. Stir to create a sauce. Add fish back for a few moments to rewarm. Put fish on spinach and pour sauce over all.
