Summer Squash Medley

Ingredients
4 cups Squash, Summer (Zucchini & Yellow), sliced 1 large Onion, chopped2 cup, pieces or slices Mushrooms, fresh 2 cup Snow Peas, fresh 2 clove Garlic, minced2 cup, chopped Kale 2 small Roma tomatoes, diced1 tbsp Balsamic Vinegar
Directions
In a large nonstick skillet, dry roast squash and onion for several minutes stirring occasionally. Add garlic and mushrooms and cook another couple minutes. Add tomatoes and heat through. Sprinkle with balsamic vinegar and chopped fresh basil if desired.
