Low Carb Mashed Potatoes

1 head, medium (5-6" dia) Cauliflower, raw 2 tbsp Parsley 2 tbsp chopped Fresh Chives .67 cup Buttermilk, lowfat 2 tbsp Butter, unsalted 3 serving Potato, Yukon Gold - 1 potato, 5.2 oz (by PIPPAGREY) 4 tbsp Daisy Light Sour Cream .5 cup Swanson Chicken Broth 99% Fat Free
Steam cauliflower until soft then drain.
Combine cauliflower, 1/3 buttermilk and 1 tbsp whipped butter in pot and puree with immersion blender. Salt and pepper to taste.
Steam potatoes until soft, then drain. combine potatoes, sour cream. 1 tbsp whipped butter and 1/3 cup of buttermilk and mash until soft. Salt and pepper to taste.
Combine cauliflower and potato and fold together (use masher if needed). Fold in Parsley and Chives. Slowly add chicken broth if the mixture is too thick.
Serving Size: Makes 9 3/4 cup servings
