Cold Beets and Lentils

2.5 to 3 cold peeled, steamed small beets (or one large beet)1 cup of cold, cooked lentils, can be pre-salted while cooking2 tbsps of balsamic vinegar Salt and Pepper, to taste.
The below instructions are based on working from pre-steamed and peeled beet and pre-cooked lentils.
Remove 2 - 3 beets from package. Chop into 1 inch pieces.
Dump 1 cup of lentils into a bowl.
Mix in beets.
Splash balsamic vinegar on top of mixture. Stir lightly.
Add salt and pepper to taste.
Enjoy!
Serving: Above recipe will make 1 serving. If you use the entire contents of the Melissa brand beets and lentils, it will make two full servings.
If you do not have pre-cooked beets or lentils, the process will take longer.
This dish may be served warm as well.
