340 Mushrooms, fresh 2 cup, strips Green Peppers (bell peppers) 2 cup, sliced Zucchini 2 cup Tomato Sauce 2 cup Del Monte Petite Cut Diced Tomatoes 2 serving Garlic - minced (1 tsp) 1 cup Red Onion Raw (1/4 cup, 40g or 1.4oz) 16 oz Barilla Pasta, Penne 5 serving Johnsonville Hot Italian Link Sausage - 1 link
1) Cut sausage links into slices, roughly 1/4" thick, and add, along with onions, and garlic in skillet to brown. Once sausage begins to brown, add green pepper to skillet, along with diced tomatoes, tomato sauce, basil and oregano. Stir until spices are well blended, and finally add zucchini slices and mushrooms. Simmer for about 5 minutes. Remove from heat.
2) Prepare 1 Lb of Penne Rigate Pasta per instructions, drain and return to stock pot.
3) Pour sauce, sausage and vegetable mixture over pasta and mix thoroughly.
4) Pour entire mixture into a 9 x 13 baking dish, and sprinkle both mozzarella and Parmesan cheeses over top.
5) Bake in preheated oven at 325 degrees for 30-45 minutes or until all vegetables are cooked.
