Chocolate Zucchini bread (oil free)

1.0 cup, sliced Zucchini1.25 cup Flour - Gold medal all purpose flour0.6 cup Granulated Sugar0.25 cup Cocoa, dry powder, unsweetened0.75 tsp Baking Powder0.5 tsp Baking Soda1.0 large Egg, fresh, whole, raw0.25 cup Lemon Juice0.5 cup Milk, nonfat (skim milk)1.0 tbsp Vanilla Extract
1.Peel, seed and shred the zucchini.
2. In a glass measuring cup mix the milk and lemon juice
3. Preheat oven to 350 degrees
4. Mix the dry ingredients.
5. Add the milk and egg and vanilla
6. Mix until moist
7. Put in a large loaf pan and bake 30 minutes (or until a toothpick inserted comes out clean)
Note: I made this lemon flavor by leaving out the cocoa powder, add another 1/4 c flour and substitute lemon extract for the vanilla
