Mac and Cheese with Green Curry

Ingredients
2 cup elbow Macaroni1 T Canola Oil1 T Green Curry Paste, MAE PLOY3.5 T all purpose flour540 ml Thai Coconut Milk0.5 tbsp Fish Sauce2 oz shredded (1/2 cup) Mozzarella Cheese, part skim milk
Directions
Cook pasta al dente, set aside. Heat oil in nonstick pan over med heat. Add green Curry Paste and whisk until bubbly. Whisk in flour and cook until it forms a smooth paste. Slowly whisk in coconut milk. Add fish sauce after it thickens. Add the cheese and stir until melted. Stir in cooked pasta and serve.
