Bean Protein Cookie

Ingredients
1-3/4 cup beans -no salt added 1/2 cup flour1 serving (2 scoops) Orgain Protein Powder - sweet vanilla bean1 scoop Amazing Grass Green Superfood 1 tsp baking soda 1/4 cup peanut butter, smooth1/8 cup granulated sugar 2 egg whites, large 1 tsp vanilla extract 1/4 cup mixed seeds
Directions
Preheat oven to 350, line or spray cookie sheet.
In bowl #1 Rinse and Mash beans
In bowl #2 Mix powders (flour, green powder, protein powder, baking soda)
In large bowl Mix peanut butter and sugar
Blend in egg whites one at a time
Add vanilla extract
Mix in beans (from bowl #1)
Mix in powder (from bowl #2)
Fold in optional seeds
Drop onto cookie sheet, press with a fork and bake for 20 minutes
This should make about 30 cookies
