Black bean burgers

Ingredients
1 can black beans rinsed1/2 cup cauliflower1/2 cup onion1/2 cup bell pepper1 cup quinoa, cooked2 eggs lightly beatensalt and pepperTony Chaceries creole seasoning
Directions
Drain and rinse black beans, put veggies on a pan coated with pam, season lightly and roast in 350 degree oven until tender
mash bean together in bowl, put roasted veggies in food processor and process until chopped very fine (not pureed)
mix all ingredients together, shape into patties and bake in moderate oven for about 20 minutes.

Brown rice can be used for quinoa, veggies can vary but don't use veggies that are too wet, like summer squash.
