*Flour, white, 2 cup (remove)Granulated Sugar, .75 cup (remove)Baking Powder, 1.5 tsp (remove)Baking Soda, .5 tsp (remove)Salt, 1 tsp (remove)Pecans, .75 cup, chopped (remove)Egg, fresh, 1 large (remove)*Corn Oil, .25 cup (remove)Lemon Peel, 2 tsp (remove)Orange Juice, .75 cup (remove)*Rhubarb, 1.25 cup, diced (remove)
Preheat oven to 350. In a large bowl combine flour, sugar, baking powder, baking soda, salt and pecans. In a medium bowl, beat egg. Stir in oil, peel and juice. Add to flour all at once and stir just until batter is moist. Stir in Rhubarb. Lightly grease muffin cups and fill 2/3 full. Bake for 25 to 30 minutes.
